Food & Beverage Services:

 

There are a number of service styles to be followed when it comes to how food and beverage should be served to the customers. The following are the most common styles

 

1.              Silver Service

7.              Self Service

 

Silver Service:

 

In this type of service style, dishes are presented and transferred to the guest plate using a service spoon and fork from the left-hand side of the guest while beverages are served from the right-hand side. It is regarded as a formal service. This food service method is also called English service. The server moves counter-clockwise while serving food. This kind of service is implemented in upscale restaurants.



American Service:

 

American service also called Plate service it’s a simple and formal service style. In this style of service, dishes are neatly plated in the kitchen by the kitchen staff and placed at the guest’s cover from the right-hand side.

The waiter should be able to carry at least three dished-out full plates to speed up the service.



Buffet Service:

 

It is a self-service where food is displayed on tables. The guests take plates stacked at the beginning of the table and proceed along requesting the buffet’s attention to serve them or help themselves. In stand-up buffets, guests are forced to stand and eat. it is more likely to be held at marriages



French Service:

 

This is also known as Family service. In French this service is found in family French Service is a very detailed and highly skilled type of service. Where the dish is presented to each guest from the left-hand side while Plated entrees are served from the right-hand side. It is a very elaborate and expensive type of service. Normally all fine dine restaurants follow this type of service.


Russian Service:

 

This is a very elaborate service and may also be called as a Sideboard or Cart service it is similar to the French Service but faster and less expensive. In this style servers place the food on the platters and serve it from the left side. Display and presentation are the major part of this service. That has elaborate garnish are neatly arranged on a platter presented to the host, taken back to the sideboard, carved, portioned, and served to the guests with service spoon and fork



Gueridon Service:

 

This Gueridon Service is also named Trolley service. In this service, partially cooked food from the kitchen is taken to the Gueridon Trolley for cooking it completely. This partial cooking is done beside the guest table for achieving a particular appearance and aroma of food on a trolley in front of the guests and served with a service spoon and fork. It is a very effective tool for merchandising.



Self Service:

 

This is the simplest form of service method in this type of service, members of service staff do not serve guests the guests enter the dining area and select food items. They pay for coupons of respective food items. They go to the food counter and give the coupons to avail the chosen food. The guests are required to take their own plates to the table and eat.

Self-service is further classified into the following types:

               Cafeteria service.

               Counter service.

               Vending service.
